Organic Kombucha scoby and starter tea

This scoby is 14cm in diameter

Kombucha is very easy to make and you can save a lot of money brewing your own

Method: Boil 500ml water and make black tea with 8 teabags add 1 cup sugar then mix and allow to cool to room temperature

Pour room temperature water into a wide mouth glass jar/ bottle. Add the cooled tea mix to it after taking out the tea bags. You can use ordinary water but filtered water will be healthier.

(A wide mouth gallon glass jar (3.4 litres) was $7 at kmart the last time I looked and that will give you 9 bottles of Kombucha ( 330ml bottles) plus 1 cup of starter tea for your next batch or if you may have some other large glass containers at home which you would like to use eg mason jars then just adjust the amount of tea and sugar to your container size.

When your sweet tea /water mix is at room temperature add the scoby and 1 cup of saved starter tea ( each time you make a batch save 1 cup of the kombucha for the next batch) and cover with a cloth and elastic band. Place in cupboard or on a shelf away from light for about 7 days. It ferments over this time to give you a probiotic rich drink whIch is very good for you. Start with half a glass a day if you have not had it previously and build up from there unless you have been drinking kombucha already and have not reacted to it as some people with autoimmune conditions or with a yeast allergy can react to drinking kombucha but otherwise it is a great drink to aid your health.

NB. There could be a little alcohol content still in the drink after the scoby has eaten all the sugar and converted it so if you are on your L's or P's be careful if consuming this drink before driving.

Once the jar has been in the cupboard for 7 days usually then you can drink the Kombucha uncarbonated either as is or with fruit juice flavouring (so strain and refridgerate at this point)

OR carbonate by straining into a jug to fill glass bottles. 330ml bottles take about 1/8th cup of juice or cut up eg 2 grapes or 2 raspberries or other fruit or cut up ginger etc. and the kombucha you have made. Just adjust this to suit your bottle size. You can experiment with different flavours and combinations of fruit or juice etc.

NB. You must have a firm lid for this step and leave about 3cms at the top for carbonation. Store for another 2-4 days in the cupboard and then refridgerate and drink at your leisure.

Once you make up the smaller bottles, you then have the container and the same scoby to make a new batch of kombucha so you can make a batch every 7 days with this same scoby. Just remember to keep a cup of tea aside from your batch for the next batch.

NB. Always wash your hands before touching the scoby.
