16cm Organic Kombucha Scoby with filtered starter tea makes 3 litres

Easy to make & Saves money making your own KOMBUCHA at home each week.
This scoby is 16cm in diameter (across)
Takes about half an hour to bottle and make a new batch not including time to cool the new tea mix although it may take longer the first few times.
Method: Boil approx 500ml water and make black tea with 8 teabags add 1 cup sugar then mix a saucepan or jug, stir till sugar dissolves and allow to cool to room temperature. Do not pour boiling water straight into your glass jar or it could crack.
Pour some room temperature water into a wide mouth glass jar/ bottle. Add the cooled tea mix to it after taking out the tea bags.
(A wide mouth gallon glass jar (3.4 litres) was $7 at Kmart the last time I looked and that makes 9-10 bottles of Kombucha each week (330ml bottles) as well as 1 cup of starter tea for your next batch. If you have other large glass containers at home you can use them eg mason jars then just adjust the amount of tea and sugar to your container size. You will not need lids.
Fill your container to half with water, add your sweet tea /water mix when at room temperature then the scoby and 1 cup of saved starter tea. If there is more room you can add more water to bring it near the top ( leave 3cms (each time you make a batch save 1 cup of the kombucha for the next batch).
Cover with a cloth eg teatowel and use an elastic band to secure it. Place in cupboard or on a shelf away from light for about 7 day. It ferments over this time to give you a probiotic rich drink whIch is very good for you. Start with a small amount in case you react to it if you have never had this before. Build up from there unless you have been drinking kombucha already. Some people with autoimmune conditions or with a yeast allergy can react to drinking kombucha but otherwise it is a great drink to aid your health as are other fermented foods. (A tip to check this: buy one bottle from the supermarket and try a little, recap and put in fridge and drink the rest the next day or over a few days if no reaction)
NB. There could be a little alcohol content still in the drink after the scoby has eaten all the sugar and converted it, so if you are on your L's or P's be careful if consuming this drink before driving.
Once the jar has been in the cupboard for 7 days you can drink the Kombucha uncarbonated either as is or with fruit juice flavouring (add juice after straining) and refrigerate at this point)
OR carbonate it by straining into a jug to fill glass bottles. 330ml bottles take about 1/8th cup of juice or cut up eg 2 grapes or 2 raspberries or other fruit or cut up ginger etc. to add to each individual bottle with the kombucha you have made and have a secure lid. Just adjust this to suit your bottle size & taste.
Leave at least 3cms at the top for carbonisation. Store for another 2-4 days in the cupboard ( 2-3 days if fruit/juice or 4 days if ginger) then refrigerate to drink at your leisure later.
Once you make up the smaller bottles, you then have the container and the same scoby to make a new batch of kombucha so you can make a batch every 7 days with this same scoby. Just remember to keep a cup of tea aside from your batch for the next batch.
NB. Always wash your hands before touching the scoby. If going away for a holiday you can store the scoby in the jar with the cup of starter tea covered in the teatowel and just resume making when you get back.
